Christine's Mom's Xmas Fruit Cake 2 cups raisins Place these ingredients in a pan and wash and drain them well. Place in a roaster or large container and pour 1 cup (or more to taste) of dark rum and let sit for 1 day or more stirring occasionally. Coat with flour before using. Cream together in a mixing bowl: 1 ½ cups of butter Then add one at a time 8 eggs and beat after each egg. In a separate bowl combine: 4 cups flour Add this mixture alternately with 1 cup of orange juice to the butter mixture. After these are all blended, add one cup of jam. Pour over the fruit mixture and mix well. Line pans and cook at 275 degrees for 2 hours or until done.
